Chocolate Cupcakes
One of my favorite recipes to make is Chocolate Cupcakes. So many different flavors go with it, and they always taste amazing! One thing that always is a problem though, is finding the right recipe. I have tried so many, but they always come out... not so good. I finally found a recipe that is great. I adapted the Add A Pinch Chocolate Cupcakes Recipe to my own.
Chocolate Cupcakes
Chocolate cupcakes with raspberry frosting and filling.
Ingredients
1 cup all purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup 2% milk
1/4 cup vegetable oil*
1 whole egg
1/2 teaspoon vanilla**
1/2 cup boiling water
*Vegetable oil is better than butter for cupcakes and cakes because it mixes into the batter better.
**It is okay to put a little extra vanilla in (just a splash) if you want it to taste more vanilla-y.
- Preheat oven to 325°.
- Place cupcake liners in a cupcake tray. This recipe makes 12-14 cupcakes, depending on the amount of batter you put in each one.
- Add into a large mixing bowl flour, sugar, cocoa powder, baking powder, baking soda and salt. Mix until combined with a paddle attachment on a stand mixer, or with a whisk if you don't have a stand mixer.
- Add to flour mixture, milk, vegetable oil, egg, vanilla. Mix in the same bowl with paddle attachment, or VERY WELL with a whisk. It must be very well combined.
- Put batter into the cupcake liners. They should be around half full. It will make about 12-14.
- Put them in the oven at 325°, for 20-24 minutes. Check them around 20 minutes, and if they are not ready, do 24 minutes.
- Take out of the oven and let them cool. This should take 20-30 minutes.
- Add your favorite icing or frosting to them! There are so many good combinations (raspberry, caramel, strawberry, and so much more!). If you want to know these recipes, comment and I will post it.
